Catechin compounds include catechins, epicatechins, and their gallates, which are major monomers in grape seeds, and are also components of proanthocyanidin oligomers and polymers. Grape seeds contain abundant oils, making up about 12%-15% of their weight, with high levels of unsaturated fatty acids. They also contain small amounts of volatile components, such as alcohols, phenols, and terpenes, which have high biological activity.
