Ginger (Zingiber officinale Roscoe) is a perennial herb in the Zingiberaceae family, known for its fresh rhizome. Varieties include: Weifeng ginger, Shandong Changyi ginger, Qingzhou bamboo root ginger, Shan Nong No. 1 ginger, and Qingzhou small yellow ginger. It is also known as ginger root, hundred-spice cloud, hook-shaped finger, local hot, cool and hot child, fresh ginger, and honey-roasted ginger. The rhizome (dry ginger), pericarp (ginger skin), and leaves (ginger leaves) are all used medicinally. Ginger is cultivated in most regions of China, with major production in Sichuan, Guangdong, Shandong, and Shaanxi. It is commonly used as a spice and in pickles and snacks, with fresh ginger used for pickles and snacks, and mature ginger preferred for seasoning and medicinal purposes. Ginger contains spicy and aromatic components, with the main spicy component being "ginger oil ketone," a type of aromatic volatile oil. Its major constituents include ginger oil terpenes, water fennel oil, camphor terpenes, gingerol, eucalyptus oil, starch, and mucilage, with 95% being edible. Ginger originates from the edges of tropical evergreen rainforests, adapting to slightly shaded environments, and grows well in the spring and summer under mildly shaded conditions. It thrives in a warm, humid climate, is intolerant to cold, sensitive to dampness, and should be protected from direct sunlight. It is best grown on sloped or slightly shaded land with deep, loose, fertile, and well-drained sandy loam to heavy loam.
