Plant Source
The product comes from the ripe fruits of the Rhamnaceae family date tree. Harvest occurs in autumn when the fruits ripen. After removing impurities, the fruits are dried in the sun or baked until soft. Some are briefly boiled to soften the flesh before sun-drying.
Plant Characteristics: Deciduous small trees, occasionally shrubs, up to over 10 meters tall; bark is brown or gray-brown; long branches, short branches, and budless branches (new branches) are smoother and reddish-purple or gray-brown, zigzagged, with 2 stipular spines, long spines reaching up to 3cm, thick and straight, short spines curved downward, 4-6mm long; short branches are short and thick, protruding from old branches; new branches are green, drooping, either single or in clusters of 2-7 on short branches.
The drupe is oblong or long-oval, 2-3.5 cm long, 1.5-2 cm in diameter, red when ripe, turning red-purple later; the mesocarp is fleshy, thick, sweet; the stone is sharp-pointed at both ends, 2-chambered, containing 1 or 2 seeds. Fruit stalks are 2-5 mm long; seeds are flattened oval, about 1 cm long, 8 mm wide.
Distribution: Native to China, widely cultivated in Asia, Europe, and the Americas. In China, distributed across Jilin, Liaoning, Hebei, Shandong, Shanxi, Shaanxi, Henan, Gansu, Xinjiang, Anhui, Jiangsu, Zhejiang, Jiangxi, Fujian, Guangdong, Guangxi, Hunan, Hubei, Sichuan, Yunnan, Guizhou, growing at altitudes below 1700 meters in mountainous areas, hills, or plains.
Growth Environment: Dates grow at elevations below 1700 meters in mountains, hills, or plains. They are warm-loving trees, thriving in regions with an average annual temperature around 15°C. Budding requires temperatures between 13-15°C, branching and leaf development between 17°C, flowering and fruit-setting between 22-25°C, and fruit maturation between 18-22°C.
Main Uses: Dates can be processed into candied dates, red dates, smoked dates, black dates, wine dates, and jujube toothpicks, as well as date paste, date flour, date wine, and date vinegar, making them valuable in the food industry. The wood is used for carving, making vehicles, ships, and musical instruments. China's highest annual jujube production is 368,000 tons, with large exports of jujube and related products, boosting trade and the economy.
